午前中は墨田区までお使い業務。ラーメン課長としてはこの機会をスルーできるはずもない。お使いのことよりも、そればっかり考えるといってもいいくらいだ(殴)といことで、ランチは麺道に邁進する。らーめん改へ。
11時のオープン時に7人待ちの行列。某ログで、東京100名店に選ばれた人気店のよう。

貝塩ラーメン


まさに滋味深いという言葉がぴったりのスープで、匂いのコントロールが難しい貝出汁の使い方が見事。自家製を強調する麺は、とにもかくにもツルッとしたこれ以上ない滑りを愉しませる秀逸なもの。この一杯に関してはスープ4に対して麺が6程度のバランス、つまり、スープよりも麺の方に重きを置いていると感じた。
