ミソカツ(味噌ラーメン活動)その③ 北の大地

真っ先に松山千春が浮かぶ屋号だが、ますたにらーめんの隣で4年前に開業し、しっかり頑張っている。

ここのスープは面白い作り方をする。スープの具材は一旦中華鍋に入れられはするが、振って炒めず、グツグツ煮立たせるだけ。味噌を完全に溶かすため直接丼に入れない工夫とは思うが、これにより終始熱々なのが嬉しい。

味噌ラーメン(750円)

白味噌をベースとしたスープは、開店当初はニンニク臭が強烈だったがそれが抑えられ、味噌麹の風味がとても芳しく、塩味、味噌の甘み、油のコクも良い塩梅。

縮れ麺は小麦の風味と甘みをまとったもの。コシとツルツル感が心地よい。
いやはや、素直に美味かった。久しぶりの訪問でブラッシュアップされている印象。またこよっと。
